In Los Bajos, a picturesque town of Tyrolean origin between Frutillar and Quilanto, Paulina and her family transformed a personal need into the art of cheesemaking seven years ago. On their five hectares on the shores of Lake Llanquihue, where a restored century-old colonial house stands out, Saanen goats graze freely, recreating alpine landscapes.

The cheese factory, which was born when one of Paulina's children developed an allergy to bovine milk protein, makes both goat (DCabra) and cow (DVaca) cheeses using traditional methods with minimal and natural ingredients.

Their commitment to animal welfare and artisanal production is reflected in products with exceptional flavor and superior nutritional properties, while the setting offers unparalleled views of the Osorno, Calbuco, and Puntiagudo volcanoes.
