Its preparation respects the traditional European method reinterpreted with contemporary sous vide technique, which allows slow cooking at low temperature, preserving all the juices and natural flavors of the meat while achieving a perfect texture that gently shreds when cut.

Juan Pablo, from Puerto Varas, inherited his passion for charcuterie from his family in the Czech Republic and the trade from his father. From a young age, he learned to value every part of the animal, using it in its entirety, with respect and dedication.

For him, quality begins with the feed: an animal raised on grass results in an exceptional product. His commitment is clear: "I will never sell something I wouldn't give to my daughter," and he uses that same philosophy to make each of his products.

But her passion goes beyond charcuterie: she believes the best way to pass on tradition and culture is through food, teaching children the value of authentic flavors and carefully chosen ingredients. Her seasonings come from her own garden—Chilote garlic, rosemary, cilantro, basil—because every detail matters when it comes to honoring tradition and sharing a meal.
